Minestrone Soup is a Classic Italian dish with a rich history, made with a different types of vegetables, beans, pasta and basil-tomato mixture. It's very hearty and makes a great family meal!

1 cup white beans 4 oz green beans (cut into pieces) 2 carrot 2 potatoes 2 stalks celery 1 turnips 2 leeks 1/2 cup peas 2 large tomatoes 1 clove garlic 6 leaves fresh basil 9 cups water 1 tsp salt 2 tbsp olive oil 1/4 cup spaghetti salt and pepper
Soak beans overnight.
Peel and dice carrots, potatoes, turnips and celery.
Slice the white part of leeks.
Run the tomatoes under hot water, peel and dice. Peel the garlic.
Bring the water and salt to a boil in a large pot. Add the white beans, carrots, leeks and salt. Cover and cook for 40 minutes.
Add potatoes, turnips and celery. Cover and cook for 15 minutes.
Add peas and green beans, and cook for 15 minutes.
Using a food processor puree tomatoes, garlic, olive oil and basil.
Add tomato mixture to the pot. Cover and cook for 10 minutes.
Break the spaghetti into small pieces, add to the soup and cook for 10 minutes.Add salt and pepper to taste.
