Fig and cherry scones is a vegan, fluffy scones made with dry figs and cherries (frozen). It is easy to make and perfect for tea, coffee or snacking.

Ingredients
  

  • 3 oz dried figs
  • 1 oz frozen cherries
  • 3 cups flour
  • 1 1/2 tbsp baking powder
  • 3 tbsp vegan butter
  • 1 vegan egg
  • 1/4 cup sugar
  • 2/3 cup vegan buttermilk

Instructions
 

  • Finely dice figs and cherries.
  • Sift the flour and baking powder. Add sugar.
  • Add the butter and rub into the dry ingredients with your hands.Add vegan egg and buttermilk.
  • Incorporate cherries and figs. Stir and mix until the dough is firm.
  • Shape the dough into a rectangular.
  • Use a knife to cut the scones.
  • Place the scones on a lined baking sheets.
  • Brush the top with vegan egg was. Bake for 25-30 minutes (365F) until golden brown.
