- 3/4 cup cooked farro
- 2 cups spinach
- 2 large oranges
- 1/2 cup chopped tomato
- 1 chopped apple
- 1/2 cup orange juice
- 2 tbsp lemon juice
- 1 tbsp mustard
- fresh oregano
- salt
In a large bowl combine farro, tomatoes, oranges and oregano.
For dressing, in a blender combine orange juice, lemon juice, mustard and fresh ginger. Season with salt.
Drizzle dressing over farro mixture; toss to coat.
