Ingredients
 
 

  • 3/4 cup cooked farro
  • 2 cups spinach
  • 2 large oranges
  • 1/2 cup chopped tomato
  • 1 chopped apple
  • 1/2 cup orange juice
  • 2 tbsp lemon juice
  • 1 tbsp mustard
  • fresh oregano
  • salt

Instructions
 

  • In a large bowl combine farro, tomatoes, oranges and oregano.
  • For dressing, in a blender combine orange juice, lemon juice, mustard and fresh ginger. Season with salt.
  • Drizzle dressing over farro mixture; toss to coat.
