These Gazpacho recipe is easy to make, raw and vegan cold soup, made from whole ingredients and absolutely delicious!

Ingredients
 
 

  • 1/2 bulb onion
  • 1 3/4 lb tomatoes
  • 1 red bell pepper
  • 2 clove garlic
  • 1 cucumber
  • 2 cup fresh water
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • salt and pepper

Instructions
 

  • Peel tomatoes, garlic and onion.
  • Pell the cucumber, cut lengthwise and scoop out seeds.
  • Remove seeds from pepper.
  • Finely chop all the vegetables. Add prepared vegetables to a blender, add water, pepper and salt.
  • Blend on a high speed for 3-5 minutes. When done, add olive oil and vinegar.
  • Chill gazpacho for 2-3 hours in the refrigerator before serving.
