Ingredients
  

  • 2 cups cherries
  • 3 tbsp sugar
  • 1 orange (juice of one orange)
  • 1/2 cup water

Batter

  • 1/2 cup flour
  • 3 tbsp sugar
  • 2 tsp bakign powder
  • 1/2 tsp bakign soda
  • 1/2 cup vegan buttermilk
  • 1 tsp canola oil
  • salt
  • 1 tsp vanilla extract

Instructions
 

  • Combine cherries, sugar and orange juice in skillet or saucepan with a tight fitting lid.
  • Place over medium heat and bring to a boil. Stirring frequently, cook for 5 minutes.

  • Combine together vegan buttermilk, oil and vanilla extract.
  • Whisk together, flour, sugar, salt, baking powder and baking soda.
  • Pour the wet mixture into the dry mixture and stir.
  • Carefully drop batter (using tablespoon) onto the simmering cherries.

  • Cover the skillet (saucepan) and let it cook for 15-20 minutes (low heat).
  • Cool for 10 minutes before serving.
