- 2 cups cherries
- 3 tbsp sugar
- 1 orange (juice of one orange)
- 1/2 cup water
Batter
- 1/2 cup flour
- 3 tbsp sugar
- 2 tsp bakign powder
- 1/2 tsp bakign soda
- 1/2 cup vegan buttermilk
- 1 tsp canola oil
- salt
- 1 tsp vanilla extract
Combine cherries, sugar and orange juice in skillet or saucepan with a tight fitting lid.
Place over medium heat and bring to a boil. Stirring frequently, cook for 5 minutes.
Combine together vegan buttermilk, oil and vanilla extract.
Whisk together, flour, sugar, salt, baking powder and baking soda.
Pour the wet mixture into the dry mixture and stir.
Carefully drop batter (using tablespoon) onto the simmering cherries.
Cover the skillet (saucepan) and let it cook for 15-20 minutes (low heat).
Cool for 10 minutes before serving.
