Creamy Cauliflower Soup is a vegan version (dairy-free) of a Classic dish. It is easy to make and you will need just simple ingredients.

Ingredients
 
 

  • 500 g cauliflower
  • 2 tbsp vegan butter
  • 2 medium potatoes
  • 1 1/2 cup plant-based milk
  • 1/2 cup vegetable stock
  • 1/4 tsp salt

Instructions
 

  • Trim cauliflower.
  • Melt vegan butter in a pot. Add cauliflower pieces to it.
  • Cook under medium heat for about 20 minutes.Add chopped potatoes, vegetable stock, milk (plant-based type) and salt.
  • Simmer for 15- 20 minutes.
  • Strain through sieve, pressing down vegetables. Return the mixture to a pot and bring it to a boil.
  • Remove from the heat (you could add more milk at these stage to adjust consistency).
