Creamy Cauliflower Soup is a vegan version (dairy-free) of a Classic dish. It is easy to make and you will need just simple ingredients.

- 500 g cauliflower
- 2 tbsp vegan butter
- 2 medium potatoes
- 1 1/2 cup plant-based milk
- 1/2 cup vegetable stock
- 1/4 tsp salt
Trim cauliflower.
Melt vegan butter in a pot. Add cauliflower pieces to it.
Cook under medium heat for about 20 minutes.Add chopped potatoes, vegetable stock, milk (plant-based type) and salt.
Simmer for 15- 20 minutes.
Strain through sieve, pressing down vegetables. Return the mixture to a pot and bring it to a boil.
Remove from the heat (you could add more milk at these stage to adjust consistency).
