In a mixing bowl, add vegan butter, brown sugar and cane sugar. Mix everything together.
Add vegan egg and plant milk.
In a separate bowl, sift flour, baking powder, cinnamon and salt. Stir the dry ingredients into butter-sugar mixture. Cover the dough and refrigerate for 1 hour.
On a lightly floured work surface, roll the dough. Cut out shapes with a cookie cutter.
Allow cookies to dry for 1 hour at room temperature.
