The bold flavor of anise infuse these simple vegan coffee cake, which is best prepare a day in advance of serving.

Ingredients
 
 

  • 4 cups flour
  • 2 tsp baking powder
  • 2 tsp anise seeds
  • 1 cup water
  • 2 vegan eggs
  • 1/4 cup cane sugar
  • 1//4 cup corn syrup (dark)

Instructions
 

  •  In a saucepan, bring water and anise seeds to a boil and cook for 3 minutes.
  • Remove the pan from the heat, set aside.  
  • Sift the flour and baking powder. 
  • In a mixing bowl, whisk vegan eggs, corn syrup and cane sugar. Add infused "anise water", flour and baking powder. Mix everything. Do not overmix.
  •  Pour the batter in a prepared pan.Sprinkle anise seeds on the top.
  •  Bake for 40-50 minutes (365F) until ready.
