Pumpkin: highly nutritious and rich in vitamin A

– 2 lb pumpkin – 1/2 bulb onion – 1 stalk celery – 2 potatoes – 1/2 tsp fresh sage – 4 cups vegetable broth
Cook Time: 30 Min

Add olive oil to a heavy pot over a medium heat. Add Onion, celery, sage, salt and pepper. Cook for 5 minutes. – Stir in potatoes, cover and cook for 5 minutes.Add vegetable broth. Reduce the heat and cook for 15 minutes.
Working in batches, puree pumpkin in a blender. Pour to the pot and simmer for 5 minutes with the rest of ingredeints. Season with salt and pepper..
