Ingredients
 
 

Pie Dough

  • 1 1/4 cups flour
  • 1 tbsp cane sugar
  • 1/4 cups vegan butter (cold)
  • 3 tbsp cold water (add 1 tbsp at a time)
  • 1/4 tsp salt

Filling

  • 1/2 lb pecans (halved)
  • 3 vegan eggs
  • 3/4 cup maple syrup
  • 2 tbsp vegan butter
  • 1 tbsp cornstarch
  • 1 tbsp brown sugar

Instructions
 

Dough

  • In a mixing bowl, combine the flour, cane sugar and salt.Add (cold) vegan butter and mix using dough blender.Add (cold) water and knead the dough.Shape the dough, wrap in plastic and leave overnight in the refrigerator.

Filling

  •  Remove the dough from the refrigerator. Roll out the dough.Transfer the dough to a pie pan.In a mixing bowl, add vegan egg, maple syrup, brown sugar, vegan butter, cornstarch and salt.Scatter the pecans evenly in the pie shell. Pour the mixture over the pecans.Bake for 35-40 minutes (365F) until filling is evenly set.
