This easy, creamy Cucumber Salad with vegan sour cream is made of simple whole ingredients and ready in less than 15 minutes! It's a vegan version of Concombres à la crème salad.

Ingredients
 
 

Salad

  • 3 cucumbers
  • 2 tbsp vegan sour cream
  • 1 tsp lemon juice
  • salt and pepper

Vegan sour cream

  • 1 cup raw cashews
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt

Instructions
 

  • Peel the cucumbers and cut. Add to a mixing bowl and sprinkle salt over them. Leave the cucumbers in the refrigerator for 30 minutes 
  • .Remove the cucumbers from the refrigerator, place in a colander and rinse off under water. Leave to dry on a paper towel. 
  • Make a sauce by stirring sour cream, salt, pepper and lemon juice (optional).
