This easy, creamy Cucumber Salad with vegan sour cream is made of simple whole ingredients and ready in less than 15 minutes! It's a vegan version of Concombres à la crème salad.

Salad 3 cucumbers 2 tbsp vegan sour cream 1 tsp lemon juice salt and pepper Vegan sour cream 1 cup raw cashews 1/2 cup water 1 tbsp apple cider vinegar 1/4 tsp salt
Peel the cucumbers and cut. Add to a mixing bowl and sprinkle salt over them. Leave the cucumbers in the refrigerator for 30 minutes
.Remove the cucumbers from the refrigerator, place in a colander and rinse off under water. Leave to dry on a paper towel.
Make a sauce by stirring sour cream, salt, pepper and lemon juice (optional).
