Vegan version of a traditional madeleines.

Ingredients
 
 

  • 1 1/3 cup flour
  • 1/2 cup soy milk
  • 1/4 cup maple syrup
  • 1/4 cup grapeseed oil
  • 1 tsp baking powder
  • 1/2 lemon zest
  • 1 pinch salt
  • rasberry

Instructions
 

  • Sift flour, baking powder and salt.
  • In a separate bowl combine milk, oil, maple syrup and lemon zest.
  • Add wet ingredients to flour. Mix together. Do not overmix it.
  • Refrigirate for 1-2hrs.
  • Preheat the oven 365F. Add rasberry to each cookie on the top.
  • Bake 365F for 15-20min.
