- 1 carrot
- 3 sticks celery
- 1/4 cup pickles
- 1/4 bulb onion
- fresh dill
- fresh parsley
Dressing
- 3 tbsp vegan mayo
- 2 tbsp vegan yogurt (sugar-free)
- 1 tsp dijon mustard
- black pepper
Cook potatoes and carrots. Set aside.
Chop potatoes, celery and carrots.
Cut pickles, parsley and dill.
Combine all the ingredienst.
Add potato salad dressing before serving.
