This delicious version of simple vegan fried rice leaves out chicken and eggs and replaces it with peas, corn and sauce.

- 2 cups cooked rice
- 1/4 cup frozen peas
- 1/4 cup frozen corn
- 1 clove garlic
- 1 tsp minced ginger
- 1/4 cup dice shallots
- 1 tsp grape seed oil
Sauce
- 2 tbsp tamari sauce
- 2 tbsp vegan oyster sauce
- 1 tbsp sesame oil
- 1 tsp cane sagar
- 1/4 tsp salt
- pepper
To make the sauce: in a bowl, mix together all of the ingredients and reserve.
Heat a skillet (with grape seed oil), add ginger and garlic and stir briefly.
Add the shallots, lower the heat to medium and cook for 2 minutes.
Add the peas and corn, raise the heat to high, and stir and cook for 3 minutes.
Add the rice, stir to mix and cook for 3 minutes. Stir the sauce, and drizzle over the rice.
Stir constantly for 3-5 minutes, until the rice is evenly coated with sauce. Turn off the heat, transfer to a dish, and serve.
