Ingredients
  

Veggie Tacos

  • 4 tortillas
  • 1 cup jackfruit "pulled pork"
  • 1/2 cup spinach
  • 1/4 cup arugula

Apple Relish

  • 1 apple
  • 1 small red onion
  • 2 tbsp chilanto
  • 1 tbsp olive oil
  • 1 tsp apple vinegar
  • salt and pepper

Instructions
 

Veggie Tacos

  • Prepare vegan jackfruit "pulled pork". Set aside. Prepare apple relish. Set aside.Serve tacos with spinach, arugula and jackfruit "pulled pork".Top each taco with 1-2 tbsp of the relish. 

Apple Relish

  • In a bowl, mix chopped apple, onion, cilantro, olive oil and vinegar. Season with salt and pepper. Set aside.
