This Italian-inspired dressing would compliment simple ingredients such as potatoes and green beans.

- 1 lb green beans
- 2 lb potatoes
- 1/2 cup fresh basil
- 1 tsp Dijon mustard
- 1 tsp cane sugar
- 1 clove garlic
- 2 small red onion
- 3 tbsp olive oil
- 2 tbsp wine vinegar
- salt and pepper (to taste)
Bring a saucepan of water to boil. Add the green beans and cook for 7 minutes. Drain and rinse under cold water. Set aside.
In the same saucepan cook potatoes until tender. Cup the potatoes or use as whole (depending of the size of the potatoes). Transfer to a mixing bowl.
In a food processor combine fresh basil, Dijon mustard, garlic, onions, cane sugar wine vinegar and olive oil. Process into a smooth dressing.
Add the dressing to a warm potatoes. Add the green beans. Toss well.
