This Italian-inspired dressing would compliment simple ingredients such as potatoes and green beans.

Ingredients
 
 

  • 1 lb green beans
  • 2 lb potatoes
  • 1/2 cup fresh basil
  • 1 tsp Dijon mustard
  • 1 tsp cane sugar
  • 1 clove garlic
  • 2 small red onion
  • 3 tbsp olive oil
  • 2 tbsp wine vinegar
  • salt and pepper (to taste)

Instructions
 

  • Bring a saucepan of water to boil. Add the green beans and cook for 7 minutes. Drain and rinse under cold water. Set aside.
  • In the same saucepan cook potatoes until tender. Cup the potatoes or use as whole (depending of the size of the potatoes). Transfer to a mixing bowl.
  • In a food processor combine fresh basil, Dijon mustard, garlic, onions, cane sugar wine vinegar and olive oil. Process into a smooth dressing. 
  • Add the dressing to a warm potatoes. Add the green beans. Toss well.
