Ingredients
 
 

  • 1 eggplant
  • 1 zucchini
  • 1 bell pepper
  • 2 tomatoes
  • 1/4 bulb onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 3 cups vegetable broth
  • salt and pepper
  • fresh basil (optional)

Instructions
 

  • In a pot, warm olive oil. Add garlic, onion and saute for 3 minutes.
  • Add the zucchini, eggplant, bell pepper and cook for 10 minutes.
  • Add the tomatoes, reduce heat and simmer for 15 minutes.Add the vegetable broth and cook for 5-10 minutes.
  • Season with salt and pepper to taste. Blend before serving.
