Peach and Thyme Cupcakes

For those who love the flavor of peach, these soft cupcakes paired with fresh thyme are for you. The cupcakes are easy to pack for a picnic, lunch or barbecue.

  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 cup vegan buttermilk
  • 1/2 cup cane sugar
  • 2 vegan eggs
  • 1/4 cup vegan butter
  • 1/4 tsp salt
  • 2 peaches
  • fresh thyme
  • 3 tbsp chocolate chips (optional)


  • Pell peaches and cut into small pieces.
  • Preheat the oven.
  • Whisk together sugar and vegan egg. Add salt.
  • Add vegan buttermilk. Whisk in the flour and baking powder.
  • Melt vegan butter and add to the batter.Add the diced peaches, fresh thyme and chocolate chips. Bake for 25 minutes (365F).
