This Easy Trifle with strawberry and apricot (infused with Earl Grey tea) light dessert is perfect end to an evening meal or just indulge during sunny summer day. This desert can be made in advance and garnish before serving.

Ingredients
 
 

  • 10 oz apricots
  • 10 oz strawberries
  • 1 tbsp cane sugar
  • 1 tbsp earl grey tea
  • 1/2 cup vegan cream
  • vanilla cake

Instructions
 

  • Put cane sugar and Earl Grey into a pan with apricot quarters. Bring to the boil and simmer for 5-10 minutes. 
  • Remove the fruit and leave to cool. Leave the tea to cool.
  • Soak the sponge cake in the tea and use it as a base layer. Cover the sponge with infused apricots and strawberries. 
  • Spoon whipped cream over the top of the fruit.
