Chilled Cantaloupe Soup
Chilled Cantaloupe Soup makes a brightly flavored first course. It's dairy-free, refreshing, made of simple and whole ingredients in less than 5 minuets!
- 15 oz cantaloupe (medium size)
- 1 cup vegan yogurt
- 2 tbsp fresh mint
Peel and cube cantaloupe.
In a blender, combine cantaloupe, vegan yogurt and fresh mint and puree until smooth. Pour into bowl.
Serve, garnished with mint.
