Ingredients
 
 

  • 1 lb potatoes
  • 2 leeks
  • 6 cups water (boiling)
  • 1 tbsp vegan butter
  • 4 tbsp vegan cream
  • salt and pepper

Instructions
 

  • Peel, wash and dice potatoes and leek.In a large saucepan melt the butter, add leeks and cook over a low heat until they have softened.
  • Pour in boiling water, add potatoes.
  • Cook for 20 minutes.
  • Stir in cream, add pepper and cook for additional 5 minutes.
  • Once ready, blend everything together with a blender.
