Vegan Potato Leek Soup
Potato Leek Soup is a French Classic dish which easy to make vegetable creamy soup full of flavor and taste!
- 1 lb potatoes
- 2 leeks
- 6 cups water (boiling)
- 1 tbsp vegan butter
- 4 tbsp vegan cream
- salt and pepper
Peel, wash and dice potatoes and leek.In a large saucepan melt the butter, add leeks and cook over a low heat until they have softened.
Pour in boiling water, add potatoes.
Cook for 20 minutes.
Stir in cream, add pepper and cook for additional 5 minutes.
Once ready, blend everything together with a blender.
