- 1 can coconut milk
- 1 1/2 cup soy milk
- 2 tbsp canola oil
- 3 tbsp agave
- 1/2 tsp espresso powder
- 1/4 tsp coffee extract
- 3/4 tsp xanthan gum
Process soy milk, coconut milk, agave, canola oil, coffee and xanthan gum in a blender.
Chill in the refrigerator for 3 hours.
Once the ice cream chilled, prepare in an ice cream maker.
