These Cucumber Sandwich is a perfect appetizer for afternoon tea or simply enjoy it for lunch, picnics or as a snack. It's vegan and made of simple ingredients!

1 cucumber (long) 1/2 cup vegan cream cheese 1 tsp horseradish cream salt and pepper red pepper and greens (garnish)
Cut the cucumber into slices.Remove the peel.
Hollow out the center using a measuring spoon.
Place vegan cream cheese into the bowl. Add horseradish, salt and pepper. Stir to mix throughly.
Sprinkle the cucumber slices with salt.
Using a pastry bag, pipe cream cheese mixture on the top of each cucumber slice.
Cut out bread slices into little squares. Spread cream cheese mixture on the top of each bread square.
Place cucumber slices on the top of bread squares.
Garnish with greens and red pepper.
