These Vegan Lemon Bars are one of the easiest and healthy dessert to make and with zesty flavor! It is made of simple ingredients and could be served after a heavy meal.

Ingredients
 
 

Shortbread Crust

  • 1 cup flour
  • 1/2 cup vegan butter
  • 1/4 cup cane sugar
  • 1/4 tsp salt

Filling

  • 1 cup plant-based milk
  • 2 tsp cornstarch
  • 3 tbsp flour
  • 1/2 cup cane sugar
  • 1 tbsp lemon zest
  • juice of 1 lemon

Instructions
 

Shortbread Crust

  • In a food processor, pulse the ingredients until crumbly. Press into prepared pan. Bake for 15-20 minutes.

Filling

  • In a bowl, whisk milk(1/2cup), cornstarch and flour.
  • In a medium saucepan combine milk (1/2cup), lemon juice and sugar. Bring to boil. Reduce the heat and slowly whisk the cornstarch mixture. Cook for about 5 minutes (whacking continuously).
  • Remove from heat and stir lemon zest (at these stage you could add food coloring, if using).

Vegan Lemon Bars

  • Pour the filling over the crust and bake for 10-15 minutes. Let cool, then chill in the refrigerator overnight. 
  • Once chilled, cut into squares and dust with powdered sugar.
