These simple summer corn salad is easy to make for lunch, BBQ or basic side dish. It is made of simple ingredients but very tasty and fulfilling.

Ingredients
  

  • 1 cup cooked corn
  • 1/4 cup celery
  • 1 tomato
  • 1 mango

Vinaigrette

  • 1/4 cup olive oil
  • 1 tsp tuscan salt
  • lemon juice

Instructions
 

  • In a large salad bowl, combine cooked corn (I used frozen corn however you can use fresh corn or canned), tomatoes, shaved slices of celery, chopped spinach and mango.
  • Drizzle the top with vinaigrette(mix olive oil, lemon juice and Tuscan salt). Toss the salad and serve.
