Fig salad is one of the quickest and gorgeous salads you can make in a less than 20 minutes!

Ingredients
 
 

  • 4 small figs
  • 1 cucumber
  • 1 cup baby arugula
  • 1 cup baby spinach
  • 1 mandarin
  • 1 apple

Vinaigrette

  • 2 tbsp grapeseed oil
  • 1 tbsp balsamic vinegar
  • 1/8 tsp salt

Instructions
 

  • Cut stems from figs and slice in quarters.
  • Toss baby arugula and spinach. Add chopped cucumber, apple and mandarin.
  • Whisk vinaigrette ingredients and pour on the top of the salad.
