- 4 small figs
- 1 cucumber
- 1 cup baby arugula
- 1 cup baby spinach
- 1 mandarin
- 1 apple
Vinaigrette
- 2 tbsp grapeseed oil
- 1 tbsp balsamic vinegar
- 1/8 tsp salt
Cut stems from figs and slice in quarters.
Toss baby arugula and spinach. Add chopped cucumber, apple and mandarin.
Whisk vinaigrette ingredients and pour on the top of the salad.
