Homemade Tortillas with vegan pulled pork

Ingredients
 
 

Tortillas

  • 1 cup flour
  • 1/4 cup cassava flour
  • 3 tbsp grapeseed oil
  • 1 tsp baking powder
  • 1/2 tsp cream of tartar
  • 3-4 tbsp water
  • 1 pinch salt

Vegan pulled pork

  • 1 package jackfruit (or 1 can)
  • 1 tbsp vegetable broth powder
  • 1 tbsp soy sauce
  • 1/2 tsp hungarian paprika
  • 1/4 bulb yellow sweet onion (chopped and sauted)
  • 1-2 pinch smoked salt

Instructions
 

Tortillas

  • In a large bowl mix all the ingredients. Let it rest for 15-30min.
  • Divide it into 6-8 pieces. Roll it with a rolling pin or tortilla press.
  • In a large skillet, cook tortillas over medium heat for 2-3 min on each side.

Vegan pulled pork

  • Rinse and drain jackfruit. Use two forks to shred it ( to give it a "pulled pork" texture)
  • Mix together the rest of the ingredients and jackfuit.
  • Heat a skilled over a medium heat. Once hot, toss and cook for 10 min untill desired texture and color achieved.
