Italian Christmas Cookies Mostaccioli
Vegan, soft and chewy Christmas cookies
- 4 cups flour
- 1 tsp baking powder
- 1 cup cane sugar
- 1 cup almond flour
- 1/4 cup cacao powder
- 1/4 cup maple syrup
- 100 g apricot jam
- 3/4 cup water
- 1 tsp spice mix
In a large bowl combine all the ingredients together. Form into a ball, leave to chill for 24 hrs (cover with plastic).
Preheat the oven 365F.
On a lightly floured surface roll out the dough. Cut with a cookie cutter.
Place cookies on a tray (lined with a parchment paper).
- You can glaze your cookies with chocolate. For the topping: 200 g chocolate, melt in a bowl over simmering water.
