CREAMY TOMATO BISQUE

This hearty classic creamy tomato bisque would seen right at home on Sunday supper table.

Ingredients
 
 

  • 1 can crushed tomatoes
  • 2 1/2 cup vegetable broth
  • 3 tbsp rice
  • 1 tbsp basil leaves
  • 1/2 cup coconut milk
  • 1 clove garlic
  • 1/4 bulb onion
  • salt and pepper (to taste)

Instructions
 

  • In a saucepan, add olive oil, onion and garlic and sauce until softened. 
  • Add the broth and rice, and bring to boil.Reduce the heat to low, cover, and cook until rice is soft.
  • Add the tomatoes and basil. Cover and simmer for 10 minutes.  Remove from the heat and let cool slightly. 
  • Puree in the blender until smooth. Whisk in coconut milk, salt and pepper.
