This Plum Chutney combines sweet ripe plums, kumasi tomatoes, garlic and Italian parsley.

- 1/2 lb plums (cherry plums) (pitted and chopped)
- 1 clove garlic (chopped)
- 1 tomato (kumato tomato) (chopped)
- 3 tbsp cane sugar
- 1/4 cup white vinegar
- salt and pepper (to taste)
- 1 tbsp Italian parsley (chopped)
Bring plums, tomato, garlic, cane sugar and vinegar to a boil; reduce heat and simmer for 10 minutes, until fruits begin to soften.
Add salt and pepper; simmer, stirring constantly, 5-10 minutes or until thick.
Stir in parsley. Remove from heat.
