This Plum Chutney combines sweet ripe plums, kumasi tomatoes, garlic and Italian parsley.

Ingredients
 
 

  • 1/2 lb plums (cherry plums) (pitted and chopped)
  • 1 clove garlic (chopped)
  • 1 tomato (kumato tomato) (chopped)
  • 3 tbsp cane sugar
  • 1/4 cup white vinegar
  • salt and pepper (to taste)
  • 1 tbsp Italian parsley (chopped)

Instructions
 

  • Bring plums, tomato, garlic, cane sugar and vinegar to a boil; reduce heat and simmer for 10 minutes, until fruits begin to soften.
  •  Add salt and pepper; simmer, stirring constantly, 5-10 minutes or until thick.
  • Stir in parsley. Remove from heat.
