Ingredients
 
 

  • 1/4 cup almond flour
  • 1/4 cup quick oats
  • 1/4 cup coconut (desiccated)
  • 1/4 cup aquafaba
  • 1/2 tsp baking powder
  • 2 tbsp peanut butter
  • 3 tbsp coconut oil
  • 2 tbsp raisins
  • 2 tbsp pecans
  • 1/3 cup coconut sugar

Instructions
 

  • In a mixing bowl, stir together oats, almond flour, baking powder, coconut, coconut sugar and salt.
  • Add raisins and pecans (optional).
  • Beat aquafaba to soft peaks, add peanut butter and coconut oil.
  • Add wet ingredients to dry ingredients and mix until combined.
  • Preheat the oven 365F. Form cookies on a baking sheet.
  • Bake 10-15 minutes until golden brown.
