Ingredients
 
 

  • 1 cup couscous
  • 1/3 cucumber
  • 1/3 cup tomatoes
  • 1/3 cup olives
  • 1/4 bulb onion
  • 1/4 cup mint
  • 1/4 cup parsley

Dressing

  • 3 tbsp grapeseed oil
  • 3 tbsp lemon juice
  • 1 pinch salt and pepper

Instructions
 

  • Prepare the couscous: put coucous into a large bowl and pour boiling water. Leave it for 5 min.
  • To make the dressing, mix grapeseed oil, lemon juice, salt and pepper.
  • Using a frok, fluff up couscous and add chopped onion, cucumber, tomatoes,chopped parsley and mint. Mix to combine.
  • Serve in a dish with olives on the top.
